Akashi Ume è un whisky giapponese invecchiato in botti di bourbon e poi affinato per alcuni mesi in botti di Umeshu Shiratama (un liquore di prugna giapponese). Proviene dalla più antica delle distillerie giapponesi, la distilleria Eigashima, più conosciuta con il marchio White Oak. Akashi Meisei è un blend composto dal 30% di single malt e whisky di grano.
