Alla Quinta da Boavista, per garantire la preservazione delle caratteristiche del vitigno e il controllo totale del processo produttivo, ricorriamo alla vendemmia manuale e alla selezione manuale dei grappoli, seguiti da una diraspatura e da una leggera pigiatura delle bacche. Come serbatoi di fermentazione abbiamo i tradizionali lagares in granito con pigiatura a piedi, vasche di fermentazione in inox e, per i piccoli lotti, contenitori in pvc alimentare o fermentazione in botti nuove di legno francese da 500 litri. Ognuno di questi tipi di fermentazione conferisce al vino uno stile particolare. Come filosofia di vinificazione abbiamo solo una: estrarre delicatamente le migliori caratteristiche delle nostre uve. I monovarietali sono gli unici vini che affinano in botti da 500 litri. Dopo un affinamento, che varia tra i 15 e i 20 mesi, viene effettuato l'imbottigliamento. Tutti i vini sono sigillati con sughero naturale. Non essendo filtrati né stabilizzati a freddo, possono dare origine a un precipitato con l'età.
