Vinificazione del Vino Tinto Bairrada Filipa Pato Nossa 2021: Dalle origini, dalla vigna alla bottiglia, la filosofia è quella di creare un vino che rispetti l'espressione dell'acino senza trucco, senza artificio. Mantenimento di tecniche di vinificazione ancestrali con interventi minimi. Il Nossa rosso proviene da vecchi vigneti presenti in diverse zone segnalate sulla cartina. Il lavoro della viticoltura è manuale, nel rispetto delle tecniche tradizionali della regione, mantenendo la vegetazione naturale senza l'uso di diserbanti. Con una piccola percentuale di uve intere (circa il 10%), la vinificazione delle uve viene effettuata in un torchio di rovere di ispirazione romana. Riposa per 18 mesi in botti di rovere francese a grana fine da 500 litri, 80% usate e 20% nuove. Nel 2011 sono state imbottigliate 2500 bottiglie e 110 magnum. Tutte sigillate manualmente con cera naturale per garantire un buon invecchiamento in cantina.
