Quinta dos Carvalhais Encruzado è un vino bianco varietale Dão di eccezionale qualità, massimo esponente dell'eleganza e della ricchezza del vitigno Encruzado. Erede di antichi saperi, Quinta dos Carvalhais unisce esperienza e innovazione per creare vini molto eleganti, dai sapori di intensa delicatezza e personalità unica. Le uve Encruzado sono arrivate in cantina in cassette da 20 kg, scaricate direttamente nella pressa pneumatica. Dopo la pressatura delle uve intere, il mosto è stato sottoposto a decantazione statica a bassa temperatura per un periodo di 24 ore. Successivamente è stato inviato in un tino di acciaio inox dove ha avuto inizio la fermentazione. A metà fermentazione il vino è stato trasferito in botti nuove di rovere francese, dove ha fermentato a temperature che non superavano i 19ºC, per un periodo di circa 20 giorni. Una parte del vino ha fermentato e invecchiato per circa 6 mesi in botti di rovere francese da 225 litri. nuovo, da cinque diverse botti. Durante questo periodo il vino è stato sottoposto a frequenti rimescolamenti delle fecce fini, in modo da aumentare la sensazione di volume in bocca e aggiungere agli aromi primari aromi di legno. La restante parte ha fermentato e affinato in vasche di acciaio inox, e ha contribuito a raggiungere nella partita finale un maggiore equilibrio tra il vino e le componenti aromatiche.
