Vinificazione del Porto Calem Colheita 1999: Raccolte a mano al loro punto ottimale, le uve vengono diraspate, schiacciate e vinificate secondo un processo che si basa su una macerazione accurata con estrazione di colore, tannini e aromi dalle bucce, completata da rimontaggi continui durante la fermentazione. Questa avviene in tini, a una temperatura controllata tra i 28-30ºC, fino a raggiungere il grado Baumé desiderato. In questa fase, si procede all'aggiunta della acquavite di vino (beneficio), dando origine a un vino fortificato.
