Vinificación del Vino Quinta das Bageiras Avo Fausto Tinto 2021: como las uvas de este vino provienen de una parcela con dos variedades mezcladas, buscando replicar el tipo de plantación de un viñedo centenario. También con ese objetivo, y a través de la exhibición en el viñedo, la producción se limitó a dos o tres racimos por cepa. Como las uvas de las dos variedades, cosechadas al mismo tiempo y sin despalillado, fermentan alrededor de una semana en lagar abierto. A lo largo de ese tiempo, se realizaron remontados con masas de madera, varias veces al día, hasta que el vino alcanzó la intensidad correcta. Finalmente, el vino terminó fermentando en barricas usadas de roble francés donde envejeció. Luego pasó a un pequeño tonel de madera donde permaneció hasta embotellarse sin ningún tipo de clarificación o filtración.
