Vinificação:Todas as uvas são vindimadas manualmente e provêm, na sua maioria, da Quinta do Meco e de vinhas mais velhas no Douro Superior. À chegada da adega, passam na mesa de escolha onde é feita uma rigorosa selecção. Posteriormente, são desengaçadas, suavemente esmagadas e transferidas para cubas de fermentação em inox de formato troncocónico, onde iniciam a fermentação alcoólica com temperatura controlada. Durante o processo de fermentação é utilizada a técnica francesa de "délestage" que, quando efetuada em cubas de formato troncocónico, tem como objetivo principal aumentar a superfície de contacto pelicular no momento em que o mosto/vinho é lixiviado por cima das massas (chapéu). Como resultado obtém-se um vinho concentrado e complexo, que respeita a elegância e foge à rusticidade.Envelhecimento:O Roquette & Cazes estagiou em barricas de carvalho francês, onde permaneceu cerca de 18 mesesUm vinho que realça as técnicas de vinificação de Bordéus, em perfeita sintonia com a identidade do Douro.
