Vinificación del Vino Tinto Bairrada Filipa Pato Nossa 2021: Desde sus orígenes, desde el viñedo hasta la botella, la filosofía es crear un vino que respete la expresión de la baya sin maquillaje, sin artificios. Manteniendo técnicas ancestrales de elaboración del vino con la mínima intervención. Nossa tinto procede de viñedos viejos de varias zonas mencionadas en el mapa. El trabajo de la viticultura es manual, respetando las técnicas tradicionales de la región, manteniendo la vegetación natural sin el uso de herbicidas. Con un pequeño porcentaje de uva entera (en torno al 10%), la vinificación de los frutos rojos se realiza en prensa de roble de inspiración romana. Reposa 18 meses en barricas de roble francés de grano fino de 500 litros, 80% usadas y 20% nuevas en 2011. Se embotellaron 2500 botellas y 110 magnums. Todas ellas selladas manualmente con cera natural para asegurar una buena crianza en bodega.
