Bodega hasta 20 años. Decantar 2 horas antes de servir. Este magnífico Gevrey Chambertin es obra de Arnaud Mortet, que asumió la dirección del dominio tras el fallecimiento de su padre Denis en 2006. Los Mortets tienen una fantástica reputación en Borgoña, gracias a la estrecha relación de Denis con el legendario enólogo Henri Jayer, que sirvió como su mentor durante muchos años. Hoy Arnaud continúa el legado de su padre y nunca deja de esforzarse por mejorar la calidad de sus notables vinos Gevrey Chambertin. La parcela Premier Cru de Lavaux Saint-Jacques está situada en una pendiente empinada orientada al sur, lo que ayuda a garantizar que las vides reciban mucho sol durante la temporada de crecimiento. Las temperaturas nocturnas son mucho más frescas, lo que permite que las vides descansen y la fruta conserve mucha frescura y aromas. Las vides que se cultivan aquí tienen una edad promedio de 60 años y producen uvas pequeñas y concentradas que añaden sabores frutales intensos y complejos al cuvee final. Tras ser recolectados a mano, los frutos se seleccionan cuidadosamente y se fermentan con levaduras silvestres. El vino joven madura en barricas 70% nuevas de roble durante 18 meses antes de ser embotellado. Esto ayuda a suavizar los taninos, creando una sensación en boca aterciopelada con notas de frutas rojas brillantes equilibradas con toques de madera ahumada y tostada. Debido a su complejidad y potencia, este es un gran Borgoña para conservar durante una década o dos más, aunque ahora también se puede disfrutar con pato asado o platos de caza local como pintada o faisán.
