Durante la vinificación, hay una maceración de las pieles durante 12 horas, seguida de fermentación alcohólica a 16ºC, aprovechando solo el mosto lágrima más puro. El Bacalhoa Bical Bairrada Clásico Blanco 2021 se produce exclusivamente con uvas de la variedad Bical. Fermentamos el 60% del vino en barricas de roble francés nuevas y de 1 año, realizándose battonage (removido de las lías finas para incrementar la estructura gustativa del vino) durante 6 meses. El vino envejeció durante 12 meses en botella.
