Situada al sur de la localidad de Ancas, en el municipio de Anadia, en la zona privilegiada de Figueira da Costa. Vinificación del Espumante Sidónio de Sousa Special Cuvée Bruto: las uvas se descargan en la prensa de membrana, donde se extrae el mosto lágrima sin prensado. El mosto se enfría durante 24 horas, se decanta y se trasiega a un depósito de acero inoxidable donde realizará la fermentación, con control de temperaturas. Tras la fermentación, el vino se decanta naturalmente en el depósito, siendo pasado a limpio al final del año, momento en que se prepara para efectuar el embotellado del espumante, con levaduras libres. Las botellas de espumante van a la bodega para efectuar la segunda fermentación en botella a una temperatura controlada y ausencia de luz. Tras la fermentación, las botellas permanecen en la bodega, en crianza hasta que se realiza el removido y el degüelle sin adición de azúcar, momento a partir del cual el producto está listo para su comercialización.
