Cuando finaliza la cosecha en Dão, sólo quedan las uvas que darán origen a esta Vendimia Tardía. Es tiempo del sol de otoño, de las primeras lluvias y de la humedad, de las hojas que, en Santar, adquieren colores y estampados tan contrastantes. Sólo en los mejores años podemos elaborar este vino, al que llamamos Outono de Santar, porque siempre recuerda la magia única de esta época del año en la emblemática Vila de Santar. Vinificación del Vino Outono de Santar Vendimia Tardía 2013: Despalillado total, prensado neumático suave con uso de 20% de mosto, clarificación estática natural, fermentación alcohólica en barricas de “segundo uso” a 20°C Crianza: 6 meses de battonage con 12 meses en barricas de segundo uso.
Complejo con marcado frescor, untuoso y bien equilibrado. Final largo y persistente
Botrizado, con matices de mantequilla, frutos secos, orejones y matices florales.
