Vinificación del Vinho Verde Alvarinho Soalheiro Primeros Viñedos: Las uvas, exclusivamente de la variedad Alvarinho, se cosechan manualmente en cajas de pequeña capacidad y se transportan a la bodega en un corto espacio de tiempo. Tras el prensado, el mosto obtenido reposa durante 48 horas, seguido de una fermentación a temperatura controlada. La fermentación se realiza fundamentalmente en acero inoxidable (en torno al 15% del volumen total fermenta en barricas de roble usadas), manteniéndose las lías finas hasta principios de mayo, mes en el que se realiza el embotellado.
