Vinificación del Quinta das Carvalhas Blanco: Las uvas se cosechan a mano y se transportan a la bodega en cajas de 20 kg. Después de pasar por un proceso de selección manual, los racimos se despalillan y las uvas se prensan en una prensa neumática con parte de inertización. Tras una decantación de 24 horas, comienza la fermentación alcohólica del mosto en tanques de acero inoxidable a 14-16ºC, y luego el vino se trasiega a barricas (500L) nuevas y usadas (30:70) de roble francés donde termina el proceso de fermentación. El vino envejece en las mismas barricas durante un período de 6 meses, sobre lías finas y con bâtonnage quincenal.
