Quinta dos Carvalhais es la marca de vinos especializada en producir los mejores y más sabrosos vinos de Dão, convirtiéndose en la mayor referencia de la región. Quinta dos Carvalhais Branco Especial es un vino sin año de cosecha que confirma la excelencia de Dão en la producción de grandes blancos y el potencial de envejecimiento que caracteriza a los vinos de la región. Las uvas de las variedades destinadas a este vino fueron recibidas en bodega en pequeños 20 kg. cajas, siendo descargadas directamente en la prensa neumática. Los mostos, debidamente protegidos de la oxidación mediante el uso de gases inertes, fueron sometidos a una decantación estática a baja temperatura durante un periodo de 24 horas. Luego fueron enviados a tanques de acero inoxidable a temperatura controlada, donde se realizó la fermentación, durante alrededor de 20 días, a temperatura controlada. En este vino se intentó recuperar las antiguas costumbres del Dão en la crianza de los vinos blancos, en los que se encontraba. Es habitual envejecer durante largos periodos de tiempo en barricas viejas de roble, pasando así por condiciones ambientales variadas a lo largo del año.
