Cuando termina la vendimia en el Dão, quedan atrás solo las uvas que darán origen a este Colheita Tardia. Es tiempo del sol de otoño, de las primeras lluvias y de la humedad, de las hojas que, en Santar, adquieren colores y patrones tan contrastantes. Solo en los mejores años logramos producir este vino, al que llamamos Outono de Santar, porque siempre nos trae a la memoria la magia única de esa época del año en la emblemática Villa de Santar. Vinificación del Vino Outono de Santar Late Harvest 2013: Despalillado total, prensado neumático suave con aprovechamiento del 20% del zumo de uva, clarificación estática natural, fermentación alcohólica en barricas de “segundo uso” a 20°C. Estancia: 6 meses de battonage con 12 meses en barrica de segundo uso.
