Quinta dos Carvalhais Colheita Blanco es un vino blanco del Dão de calidad excepcional, máximo exponente de la elegancia y riqueza. Heredera de los saberes antiguos, Quinta dos Carvalhais une la experiencia con la innovación para crear vinos muy elegantes, con sabores de intensa delicadeza y la personalidad única de la región. El Gouveio y el Encruzado fueron vendimiados por separado. Las uvas fueron descargadas de cajas de 20 Kg directamente en el despalillador-estrujador. Tras el prensado, el mosto fue sometido a decantación estática. Luego se colocó en cubas de acero inoxidable, donde se añadieron levaduras autóctonas. Parte del mosto, el 10% del Encruzado, fermentó en barricas de roble francés usadas, y el resto permaneció en la cuba de acero inoxidable. El Gouveio fermentó en cuba de acero inoxidable. La fermentación ocurrió a 18ºC, durante un período de aproximadamente 20 días. De este vino, el 10% del Encruzado fermentó y envejeció alrededor de 6 meses en barricas de 225L de roble francés usadas. La parte restante del lote (90%) fermentó y envejeció en cuba de acero inoxidable. La combinación del vino de barrica con el vino de cuba contribuyó a obtener un mayor equilibrio en el lote final entre el vino y los componentes aromáticos propios de la madera.
