Quinta dos Carvalhais es la marca de vinos especializada en la producción de los mejores y más sabrosos vinos del Dão, constituyéndose como la mayor referencia en la región. Quinta dos Carvalhais Blanco Especial es un vino sin año de cosecha que confirma la excelencia del Dão en la producción de grandes blancos y el potencial de guarda que caracteriza a los vinos de la región. Las uvas de las variedades destinadas a este vino fueron recibidas en la bodega en pequeñas cajas de 20 kg, siendo descargadas directamente en la prensa neumática. Los mostos, debidamente protegidos de la oxidación mediante el uso de gases inertes, fueron sometidos a decantación estática a baja temperatura durante un período de 24 horas. Luego fueron enviados a depósitos de acero inoxidable con temperatura controlada, donde ocurrió la fermentación, durante aproximadamente 20 días, a temperaturas controladas. En este vino se intentó recuperar viejos hábitos del Dão en la crianza de vinos blancos, en la que era común su crianza durante largos períodos en viejos toneles de roble, atravesando así, a lo largo del año, variadas condiciones ambientales.
