Vinificación del Vino Sidónio de Sousa Merlot Tinto 2017: Despalillado/estrujado y enfriamiento de las uvas en la bodega en pequeños lagares abiertos, donde se inicia la maceración pelicular y posteriormente la fermentación. La pisado se realiza manualmente con masas de madera para aumentar una mayor extracción de las características vínicas de la variedad Merlot. Tras la fermentación lenta en pequeños lagares abiertos, el vino pasa a cubas de cemento y depósitos de Inox, donde reposa hasta enero del año siguiente, momento en el que se trasiega y se pasa a barricas de madera nueva de roble francés donde estagia 6 meses.
