Vinificación del Calcário 3 del Principal Tinto: Vendimia manual con selección en cinta de selección a la entrada de la bodega. A continuación, se realiza el despalillado y el estrujado, siendo el resultado transferido a cubas de inox con temperatura controlada para la fermentación alcohólica y maloláctica. Maceración durante aproximadamente 20 días, utilizando la técnica delestage. El vino envejece de 24 a 30 meses en barricas usadas de roble francés de 225 litros. Envejece 6 años más en botella antes de ser comercializado.
