Quinta dos Carvalhais Colheita es un vino tinto Dão de excepcional calidad, máximo exponente de elegancia y riqueza. Heredera de conocimientos ancestrales, Quinta dos Carvalhais combina experiencia con innovación para crear vinos muy elegantes, con sabores intensamente delicados y la personalidad única de la región. Las uvas fueron cosechadas por variedades y parcelas, con una rigurosa selección cualitativa de las mismas. Tras un suave despalillado y prensado, la uva pasa, por gravedad, a pequeños depósitos de acero inoxidable con control de temperatura, donde se vinifica variedad a variedad. La fermentación alcohólica se realizó durante unos 8 días, a una temperatura media de unos 27ºC, permaneciendo Touriga Nacional en maceración postfermentativa durante 10 días más. Este vino envejeció en barricas usadas de roble francés durante un período de 12 meses. El coupage final se elaboró a partir de la selección cualitativa de numerosas catas y análisis realizados durante este período, que permitieron elegir los mejores vinos, variedad de uva por variedad. El vino fue sometido a una ligera clarificación y filtración antes del embotellado y fue embotellado sin tratamiento de estabilización en frío, lo que puede provocar la formación de depósitos durante el envejecimiento en botella.
