Vinificación de Quinta do Cardo Grande Reserva Blanco: Tras el prensado de las uvas, el mosto fermentó en barricas de 500 litros, nuevas y usadas, de roble francés. Siguió un año de crianza sobre las lías totales de fermentación. La Quinta do Cardo es la propiedad vitivinícola más histórica de la Beira Interior, situada entre el paisaje protegido de la Reserva Internacional del Duero y la aldea histórica de Castelo Rodrigo, a una altitud que ronda los 750 metros. Sus 180 hectáreas de superficie albergan bosque, alcornoques y cerca de 80 hectáreas de viñedo, desde 2009 certificadas en el modo de producción biológico. La finca es un ecosistema cuidadosamente preservado que promueve la biodiversidad y el desarrollo de la fauna y flora autóctonas y contribuye a la creación de vinos genuinos, con un fuerte sentido de terroir.
