En la bodega José de Sousa todavía se utilizan algunas técnicas ancestrales de vinificación, siendo la más emblemática la utilización de la talha en la fermentación de las uvas. Lo esencial de la vinificación en talha ha cambiado poco en más de dos mil años. En este proceso, las uvas blancas se aplastan ligeramente a pie y se despalillan a mano en una mesa de ripanço. La fermentación ocurre, sin engaços, en talhas con capacidad media de 1.600 litros a una temperatura que ronda los 28ºC, siendo controlada por riegos de las talhas 4 veces al día. La fermentación dura aproximadamente 8 días, quedando el vino en contacto con las masas hasta noviembre. Envejece en ánforas por un período de 4 a 10 meses, dependiendo de la vendimia. Durante este período se coloca una película de aceite para prevenir oxidaciones.
