Vinificación del Vino Sidónio D Sousa Reserva Tinto: Estrujado con despalillado parcial y enfriamiento de las uvas en la bodega en pequeños lagares abiertos, donde se inicia la maceración pelicular y posteriormente la fermentación, sin adición de enzimas y levaduras. La pisa se realiza manualmente con masas de madera para aumentar la extracción de las características vínicas de la variedad. Tras la fermentación en pequeños lagares abiertos, el vino pasa a cubas de cemento y depósitos de Inox, donde reposa hasta enero del año siguiente, momento en el que se trasiega y se pasa a toneles de 4.000 litros de roble nacional avinhados, donde estagia 12 meses.
