Scala Coeli, deve o seu nome ao Mosteiro de Santa Maria Scala Coeli, normalmente conhecido por Mosteiro da Cartuxa, local onde os monges cartuxos viveram em silêncio e oração. Resulta das melhores vinificações de cada ano de castas menos tradicionais ao Alentejo. Foi produzido pela primeira vez em 2005.Vinificação: Obtido a partir das melhores vinificações da colheita, utilizando castas menos tradicionais na região. Em 2021 resultou da vinificação da casta Syrah, vindimada a 20 de agosto. Neste dia as uvas foram cuidadosamente colhidas e levadas para a adega, onde se procedeu à maceração pré-fermentativa a frio, seguida de fermentação alcoólica à temperatura de 28ºC e de maceração prolongada. Encuba total de 30 dias. Estagiou 15 meses em barricas novas de carvalho francês.
