Vinificación del Vino Esporao Private Collection Tinto 2019: cada variedad fue vinificada y envejecida por separado. El Syrah y el Aragonez con fermentación en pequeños lagares de acero inoxidable, y pisado a pie alternado con remontajes manuales cortos realizados 2 a 3 veces al día, dependiendo de la cata diaria durante la fermentación. El Alicante Bouschet fermenta en un pequeño depósito de acero inoxidable, con remontajes manuales. De esta forma, y debido a la piel relativamente frágil de la uva, se evita la extracción exagerada de taninos derivada del pisado a pie. Tras el prensado, los vinos se mantuvieron por separado. La fermentación maloláctica se llevó a cabo en barricas y de forma espontánea. El envejecimiento se realizó 30% en barricas nuevas y 70% en barricas usadas (1 año) de 225L y 500L de roble francés. Después de 18 meses de envejecimiento, durante los cuales solo se realizó un trasiego inmediatamente después de la maloláctica, se constituyó el lote final y se embotelló el día 25 de junio de 2015, solo con una ligera filtración y sin ningún tipo de clarificación.
