Vinification of Casa de Rodas Alvarinho: Manual harvest, total destemming, pressing of whole grapes in a pneumatic press in a gentle manner. Static clarification of the must by cold at 12ºC for 48 hours. Fermentation for 3 weeks with temperatures between 14ºC and 22ºC. Aging on fine lees for 6 months.
