Vinificación del Vino Vallado Tinto 2018 de 12 Litros: Cerca del 80% de las uvas provienen de viñas plantadas en la década de 1990 y el 20% de viñas viejas con edades entre 60 y 100 años. Las uvas se vinifican en cubas de acero inoxidable de 5 y 10 toneladas de capacidad, totalmente despalilladas. El mosto fermenta durante aproximadamente una semana a 23º-25ºC con remontaje automático programado. Estagio: alrededor del 70% del vino se estagia durante 16 meses en cubas de acero inoxidable y el resto en barricas de 225 lt de roble francés de 3º y 4º año.
