Vinificação do Vinho Cartuxa DOC Tinto de 3 Litros: produzido a partir das castas Aragonez, Alicante Bouschet e Trincadeira, plantadas nas vinhas de Fundação Eugénio de Almeida. Quando as uvas atingem o estado de maturação ideal, são colhidas e transportadas para a adega, onde se inicia o processo tecnológico com desengace total e ligeiro esmagamento. Em seguida, as uvas são fermentadas separadamente, em cubas de inox, à temperatura de 27º, a que se segue maturação pós-fermentiva prolongada. Estagiou 12 meses em tonéis e barricas de carvalho francês e 6 meses em garrafa.
