Vinificación del Vino Ribeiro Santo Encruzado y Touriga Nacional Tinto: Uvas de Encruzado vendimiadas separadamente de las de Touriga Nacional – todo el proceso se realizó de forma individual. La mezcla determina el porcentaje de cada una de las variedades – 15% de Encruzado y 85% de Touriga Nacional. Vendimia manual. Despalillado total. Maceración prolongada en depósito de acero inoxidable. Fermentación alcohólica con levaduras indígenas bajo temperatura controlada durante 20 días. Pisado con los pies. Decantación para barricas nuevas de roble francés de 225L por 12 meses. Tras el envejecimiento se procedió a la mezcla.
