El vino espumoso Real Companhia Velha Brut es el resultado de una cuidadosa selección de Pinot Noir y Chardonnay procedentes esencialmente de Quinta de Cidrô en São João da Pesqueira, con parte del Pinot recolectado en Quinta do Casal da Granja en la meseta de Alijó. El terroir de Cidrô, por su altitud y clima templado, permite un ciclo más largo en la cepa, permitiendo así que tanto Pinot Noir como Chardonnay sean cosechados en el momento perfecto para ser espumosos. Esta hermosa Quinta, aunque ubicada a 550m de altitud, tiene un suelo pobre y de esquisto, lo que se traduce en una menor producción, lo que le da a este Espumoso una excelente textura, volumen y acidez. En la meseta de Alijó, en Quinta do Casal da Granja, los suelos más ricos y el clima aún más fresco dan como resultado vinos más frescos y aromáticos. Mediante un aclareo intencionado, con el fin de preservar un alto nivel de acidez natural de la uva, se recogen los racimos más verdes y se vinifican en pequeñas tinas de acero inoxidable que sirven de base para los lotes finales.
