O Inniskillin Vidal Pearl Icewine, originário da região de Niagara Peninsula, Ontário (Canadá), é elaborado com uvas Vidal Blanc naturalmente congeladas na videira, fermentadas lentamente para alcançar 9,5% de álcool. Apresenta aromas intensos de manga, damasco e mel, combinando sabores de pêssego e açúcar mascavo cristalizado, sustentados por acidez brilhante e vibrante. No paladar, é extremamente doce com cerca de 245‑250 g/L de açúcar residual, mas perfeitamente equilibrado pela acidez (cerca de 9,8 g/L), resultando num final longo, rico e delicado, com nuances de marmelada e frutas tropicais. Classificado com 93 pontos pela Wine Advocate e 91 pela Wine Enthusiast, é um icewine expressivo e refinado, ideal como vinho de sobremesa acompanhado por queijos fortes ou torta de pêssego.
