Vinificación del Espumante Caves São João 100 Años de Historia Brut: Tras una prensada muy delicada de las uvas, cosechadas a finales de agosto, el mosto fermentó durante 15 días en tanques de acero inoxidable a temperatura controlada. La elaboración, siguiendo el método clásico, comenzó en marzo de 2016 con el tiraje con levaduras libres, habiendo la refermentación transcurrido en bodega durante 25 días a 14 ºC, seguido de un período de crianza en botella, sobre lías, de 48 meses, para el primer lote degollado, en mayo de 2020.
