El origen del Aguardiente Bagaceira Adamus se remonta a tiempos lejanos de la historia de Portugal, la imagen actual e inadecuada, menos noble y desprestigiada de una bebida rústica y llena de historia tendría que ser restituida. Después de 4 generaciones produciendo aguardientes bagaceiras tradicionales, llegó el momento de producir también una bagaceira que uniera lo mejor de un aguardiente tradicional, con detalles más modernistas, y sin perder el alma de una pura bagaceira lusitana y específicamente de la Bairrada. Se seleccionó el mejor bagazo de uva proveniente de la vinificación de los mejores vinos Baga de la Bairrada, habiéndose acompañado cuidadosamente todo el proceso de vinificación y maduración de los mismos. Se realizaron varias destilaciones, lentas y detalladas, en recipientes de cobre, por arrastre de vapor directo, y se seleccionaron los mejores destilados, tanto en cata como analíticamente en laboratorio.
