Para la obtención de este brandy se utilizan tres variedades diferentes de uva (uvas Sultana, Savatiano y Corinthe). Tras la obtención del destilado, sus aromas se dejan desarrollar en barricas de roble Lemosín durante un periodo mínimo de tres años. Al brandy se le añaden uvas moscatel (de Samo o Lemno), esencias de flores de rosas y una serie secreta de plantas aromáticas. Luego esta nueva mezcla se vuelve a colocar en una barrica durante un año más. Antes de ser embotellado, Metaxa pasa varios días a una temperatura bajo cero, se filtra y finalmente se embotella. Crianza de 5 años en barrica de roble. Destilación en alambique discontinuo.
Frutas maduras y dulces y caramelo.
Aroma a melocotón maduro, ciruela y flores secas.
