"Hasta finales de los años 90, los vinos del Dão se envejecían tradicionalmente en depósitos de cemento sin revestir. Vinifiqué y embotellé muchos vinos de esos cuando comencé mi carrera como joven enólogo. Los depósitos de acero inoxidable y las barricas eran un espejismo para el 80% de los productores. Con ese recuerdo, preservé un depósito de cemento en la Quinta de Santa Maria en Cabanas de Viriato donde envejecí este vino para recordar los vinos del Dão de otros tiempos y que aún deleitan a los enófilos conocedores." por Carlos Lucas
