El año 2000 fue excelente para las uvas del altiplano de Favaios. La naturaleza nos premió con un año equilibrado, con temperaturas suaves y lluvias en los momentos adecuados, permitiendo crear uvas de gran calidad, armonía y llenas de aromas característicos de la variedad. Tras una cuidadosa selección de las mejores uvas de Favaios, fueron maceradas y fermentadas tal como se hacía tradicionalmente en la región. La fermentación alcohólica es muy corta, y justo después de que sube la manta se procede al sangrado de la mayor parte del mosto y a la aplicación de aguardiente. Una pequeña parte del mosto continúa fermentando y macerando con las pieles durante algunos días más, y solo más tarde se procede a la aguardentación de ese mosto muy rico aromáticamente. El primer y segundo mosto aguardentados se mezclan después y se almacenan en balseiros de madera vieja donde el vino envejece lentamente, mejorando su bouquet a lo largo de 20 años. Los largos años de envejecimiento en madera ayudaron a desarrollar y complejizar aún más el perfil aromático del vino así como su paladar. Es un bello ejemplo de los mejores Moscateles que se hacen en el altiplano de Favaios. De esta cosecha se seleccionaron apenas 3200 litros para este lote.EDICIÓN LIMITADA
