Transporte de uvas en cajas pequeñas para evitar el aplastamiento. Selección manual de los racimos. Maceración pelicular en frío. Despalillado total seguido de suave prensado. Fermentación espontánea en barricas de roble procedentes de los bosques austríacos y franceses. Crianza sobre lías totales, con bâtonnage periódico. Sin estabilización ni filtración.
