Vinificación del Vino Cartuxa DOC Tinto de 3 Litros: producido a partir de las variedades Aragonez, Alicante Bouschet y Trincadeira, plantadas en los viñedos de la Fundación Eugénio de Almeida. Cuando las uvas alcanzan el estado de maduración ideal, se cosechan y se transportan a la bodega, donde se inicia el proceso tecnológico con despalillado total y ligero estrujado. A continuación, las uvas se fermentan por separado, en cubas de inox, a una temperatura de 27º, seguido de una prolongada maduración post-fermentativa. Estuvo 12 meses en toneles y barricas de roble francés y 6 meses en botella.
