Las viñas viejas de la Quinta Vale D. Maria están divididas en parcelas diferentes y cada parcela se cosecha a mano. Las uvas son seleccionadas antes de entrar en la bodega. Se despalillan y se pisan en lagares de 1 a 3 días antes de la fermentación que ocurre en Lagar y/o en cubas de acero inoxidable. En el lagar, los vinos se pisan a pie todas las noches, en cubas de acero inoxidable, se realizan remontajes manuales. Los vinos se trasiegan a barricas nuevas de roble francés, de 225 litros, provenientes de diversas tonelerías (Seguin Moreau, François Fréres, Taransaud, Nadaliee Berthomieu), donde se lleva a cabo la fermentación maloláctica. Todos los vinos maduran después durante 21 meses en barricas de roble francés (70% de barricas nuevas y 30% de barricas de un año), siendo los diferentes lotes obtenidos de cada fermentación mantenidos completamente separados hasta la composición del lote final, aproximadamente un mes antes del embotellado.
