La vendimia se realiza de forma manual, con selección manual de los racimos. Las bayas se despalillan y se trituran suavemente. Como depósitos de fermentación se utilizaban tradicionales molinos de granito con pisada. Posteriormente el vino envejece en barricas de roble francés durante al menos 18 meses. Todos los vinos están sellados con corcho natural. Al no estar filtrados ni estabilizados por el frío, estos vinos pueden dar lugar a un precipitado con la edad.
El corazón profundo del arbusto
En boca concuerda en todo: taninos sedosos deambulan por la rica presencia de frutas y los toques especiados de la barrica, que se regocijan con una acidez impecable.
En nariz dominan las notas de frutas del bosque, con toques de bergamota y suave mentol que le aportan un frescor embriagador.
