Vinificación del Oporto Calem Cosecha 1998: Cosechadas a mano en su punto óptimo, las uvas son despalilladas, trituradas y vinificadas según un proceso que se basa en una cuidadosa maceración con extracción de color, taninos y aromas de las pieles, complementado por remontados permanentes durante la fermentación. Esta se realiza en lagares, a una temperatura controlada entre 28-30ºC, hasta alcanzar el grado Baumé deseado. En esta fase, se procede a la adición del aguardiente vínico (beneficio), dando lugar a un vino fortificado.
