O Incógnito nació del espíritu innovador e inquieto de Carrie y Hans Jorgensen. En Cortes de Cima, la parcela 9C es la primera viña de la variedad Syrah plantada en Alentejo. Cuando en 1991 Hans Jorgensen plantó las cepas con injertos provenientes directamente del Ródano, en una zona de terreno calcáreo en la cima de una colina, no imaginaba que la viña daría origen a un vino que marcaría la región y los vinos de Alentejo. Este vino fue producido exclusivamente a partir de la variedad Syrah. Las uvas fueron rigurosamente seleccionadas por estar en un óptimo estado de maduración. Fueron fermentadas sin despalillar, a temperaturas controladas, con delestage regular, y un prolongado período de maceración de los hollejos para mejorar el aroma a frutos y conseguir un buen equilibrio y estructura de taninos. Envejecido durante 8 meses en barricas de roble francés (90%) y roble americano (10%) hasta el momento del embotellado.
