El Favaios 1989 es el tipo de vino que se vinifica solo en los años en que las uvas demostraron tener una calidad excepcional. Tras una cuidadosa selección de las mejores uvas de Favaios, fueron maceradas y fermentadas tal como se hacía tradicionalmente en la región. La fermentación alcohólica es muy corta, ya que justo después de que sube la manta se procede al sangrado de la mayor parte del mosto y a la aplicación de aguardiente. Sin embargo, una pequeña parte del mosto continúa fermentando y macerando con las pieles durante algunos días más y solo más tarde se procede a la aguardentación de ese mosto muy rico aromáticamente. El primer y segundo mosto aguardentados se mezclan después y se almacenan en toneles de madera muy vieja, envejeciendo lentamente y mejorando su bouquet a lo largo de décadas.EDICIÓN LIMITADA
