En la bodega José de Sousa aún se utilizan algunas técnicas ancestrales de elaboración del vino, siendo la más emblemática el uso del tallado en la fermentación de la uva. Los elementos esenciales de la elaboración del vino tallado han cambiado poco en más de dos mil años. En este proceso las uvas blancas se estrujan ligeramente con los pies y se despalillan a mano sobre una mesa de despalillado. La fermentación se realiza, sin raspones, en tinajas de una capacidad media de 1.600 litros a una temperatura que ronda los 28ºC, controlándose regando las tinajas 4 veces al día. La fermentación dura aproximadamente 8 días, permaneciendo el vino en contacto con la masa hasta noviembre. Crianza en ánforas durante un periodo de 4 a 10 meses, según la añada. Durante este periodo se coloca una película de aceite de oliva para evitar la oxidación.

Elegante, complejo, buena acidez y final seco.
Frutos secos, especialmente avellanas. Especias, evolucionadas, pimienta blanca, kiwi maduro, pan, licor, heno.
