Vinificación del Vino Quinta dos Bons Ares Blanco: Para este vino se realizó una primera selección de calidad de las uvas, que fueron recogidas y colocadas en pequeñas cajas, y posteriormente enfriadas durante 12h de maceración pelicular en el centro de vinificación de la Quinta dos Bons Ares. En la recepción, pasaron por una segunda selección, antes de caer por gravedad en las prensas en las cuales fueron sometidas a suaves ciclos de prensado. El mosto limpio fermentó lentamente y a baja temperatura, para preservar el potencial aromático, del cual el 10% fermentó y envejeció durante 7 meses en barricas de roble francés.
