Para obtener este brandy, se utilizan tres variedades diferentes de uvas (uvas Sultanina, Savatiano y Corinto). Tras la obtención del destilado, sus aromas se dejan desarrollar en barriles de roble de Limousin durante un período mínimo de tres años. Uvas Moscatel (de Samos o Lemnos), esencias de flores de rosa y una serie secreta de plantas aromáticas se añaden al brandy. A continuación, esta nueva mezcla se coloca de nuevo en un barril por un año más. Antes del embotellado, el Metaxa pasa varios días a una temperatura bajo cero, se filtra y finalmente se embotella. Envejecimiento de 5 años en barriles de roble. Destilación en alambique discontinuo.
