Las uvas de Pinot Noir provienen de la Quinta de Nápoles, de una parcela plantada a principios del milenio, que está en modo de producción biológica certificada desde 2018. La selección de las uvas se realiza en el viñedo para cosechar los racimos que se encuentran en un estado perfecto de maduración y sanidad, recogidos en cajas de 20 kg, siendo colocados directamente en cuba de acero inoxidable, racimo entero, donde se pisan a pie y fermentan espontáneamente con temperatura controlada. Tras la fermentación alcohólica en acero inoxidable, la fermentación maloláctica se realiza ya en barrica, donde envejeció durante unos 16 meses.
