Vinificación del Aguardiente Adega Velha 12 Años XO: las uvas, seleccionadas por su alta acidez y bajo contenido de azúcares, son el origen de un vino ligero y equilibrado. El vino se somete posteriormente a dos destilaciones lentas y cuidadosas en alambique Charentais, traído de la Región de Cognac, en Francia. Tras el proceso de destilación, el Aguardiente se envejece en barricas de roble francés, procedentes de la región de Limousin, teniendo la mezcla final una edad media de 12 años de envejecimiento.
