Vinificación del Vino Bairrada Filipa Pato Nossa Tinto: Desde el origen, de la viña a la botella, la filosofía es crear un vino que respete la expresión de la baga sin maquillaje, sin artificios. Manteniendo técnicas ancestrales de vinificación con mínima intervención. El Nossa tinto tiene origen en viñas viejas de varias zonas mencionadas en el mapa. El trabajo de viticultura es manual respetando técnicas tradicionales de la región, manteniendo la vegetación natural sin uso de herbicidas. Con un pequeño porcentaje de uva entera (alrededor del 10%), la vinificación de la baga se realiza en lagar de roble inspirado en la época de los romanos. Reposa por 18 meses en barricas de 500 litros de roble francés de grano fino, 80% usado y 20% nuevo. Se embotellaron 2500 botellas y 110 magnums en 2011. Todas ellas están selladas manualmente con cera natural para garantizar un buen envejecimiento en bodega.
